
Healthy, High-Protein Egg Salad Snack You’ll Actually Love
My chickens are in full swing laying eggs almost every day. That means I have a lot of eggs. I have done all the usual storage hacks, water glassing eggs in lime water, cracking and freezing with salt or sugar and boiling a ton of them to eat throughout the week. My family likes to use boiled eggs, plain, for deviled eggs, potato salad and egg salad.

I've been trying out some different egg combinations to mix up eating all of the eggs we still have after selling what we can. Egg salad sandwiches are delicious. Usually I just add lettuce and the egg salad on some bread. I did try doing an open face sandwich with cheese and one with avocado. Both are pretty good.
Simple Egg Salad:
6 boiled eggs shelled and chopped
2 TBLS Mayonnaise
2 Teaspoons worcestershire sauce
1 Teaspoon Dijon mustard
1 Teaspoon garlic powder
Salt and pepper to taste
Hot sauce optional
Mix and enjoy.
Now that you have the basic recipe now just think of things you can add it to.
Sandwiches, crackers, rice cakes, celery and more!

Here is what I did:
This was a shockingly delicious snack. The crunch from the seed crackers and the cucumber topped with the delicious salty egg salad was an amazing combination. so good. We've been eating a lot of it. The next time I made it, I diced the cucumber and just put it all in the egg salad. Because of the water content from the cucumbers I didn't need to add much more of any of the condiments, just a little more salt and pepper.
